Gator Sausage & Cornbread Casserole

Ingredients
- 1 lb Tallent Sausage Gator Jambalaya Sausage, removed from casing
- 1 cup yellow onion, diced
- 1/2 cup bell pepper, diced (red or green)
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 (8.5 oz) box cornbread mix (like Jiffy)
- 1/4 cup milk
- 1 egg
- 1 cup shredded cheddar cheese
- 3/4 teaspoon Cajun seasoning
- 1/4 teaspoon black pepper
- 2Tbsp chopped green onions (plus additional chopped for garnish)
Instructions
- Preheat Oven
- Preheat your oven to 400°F (190°C). Grease a 9x11-inch baking dish.
- Cook the Sausage & Veggies
- Heat a skillet over medium heat. Add the Gator Jambalaya Sausage and cook until browned and cooked through.
- Add onions and bell peppers, sauté for 3-5 minutes until softened. Stir in corn and cook for another 2 minutes. Remove from heat.
- Prepare the Cornbread Batter
- In a mixing bowl, combine cornbread mix, milk, and egg. Stir until just combined.
- Assemble the Casserole
- Fold the cooked sausage mixture, cheddar cheese, and green onions into the cornbread batter.
- Add Cajun seasoning and black pepper, then mix gently.
- Bake
- Pour the mixture into the greased baking dish and smooth the top.
- Bake for 25-30 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
- Serve
- Let it cool for a few minutes, then garnish with chopped green onions if desired. Serve warm!
