Gator Sausage & Cornbread Casserole

Ingredients

  • 1 lb Tallent Sausage Gator Jambalaya Sausage, removed from casing
  • 1 cup yellow onion, diced
  • 1/2 cup bell pepper, diced (red or green)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 (8.5 oz) box cornbread mix (like Jiffy)
  • 1/4 cup milk
  • 1 egg
  • 1 cup shredded cheddar cheese
  • 3/4 teaspoon Cajun seasoning
  • 1/4 teaspoon black pepper
  • 2Tbsp chopped green onions (plus additional chopped for garnish)

 Instructions

  1. Preheat Oven
  • Preheat your oven to 400°F (190°C). Grease a 9x11-inch baking dish.
  1. Cook the Sausage & Veggies
  • Heat a skillet over medium heat. Add the Gator Jambalaya Sausage and cook until browned and cooked through.
  • Add onions and bell peppers, sauté for 3-5 minutes until softened. Stir in corn and cook for another 2 minutes. Remove from heat.
  1. Prepare the Cornbread Batter
  • In a mixing bowl, combine cornbread mix, milk, and egg. Stir until just combined.
  1. Assemble the Casserole
  • Fold the cooked sausage mixture, cheddar cheese, and green onions into the cornbread batter.
  • Add Cajun seasoning and black pepper, then mix gently.
  1. Bake
  • Pour the mixture into the greased baking dish and smooth the top.
  • Bake for 25-30 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  1. Serve
  • Let it cool for a few minutes, then garnish with chopped green onions if desired. Serve warm!
