Chili Cheese Tater Tot Casserole
A crispy, cheesy, and bold casserole made with Tallent Chili Cheese Sausage. A recipe the whole family will ask for again and again!
Ingredients:
- 1 lb Tallent Chili Cheese Sausage, removed from casing
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (15 oz) can pinto beans (do not drain)
- 1 (10 oz) can Rotel (diced tomatoes with green chilies)
- 1 (8 oz) can tomato sauce
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp smoked paprika
- Salt & pepper to taste
- 2 cups shredded cheddar cheese
- 1 (32 oz) bag frozen tater tots
- Sour cream & chopped green onions for garnish
Instructions:
- Preheat oven to 375°F. Grease a 9x13-inch baking dish.
- In a large skillet over medium heat, cook the Tallent Chili Cheese Sausage, stirring often to break into small crumbles, until browned and fully cooked. Remove from heat and set aside.
- In the same skillet, add diced onion and cook until softened, about 3 minutes. Stir in garlic and cook for another 30 seconds.
- Add pinto beans, Rotel, tomato sauce, chili powder, cumin, paprika, salt, and pepper. Stir well and let simmer for 5 minutes. Return the browned sausage to the pan and mix well.
- Assemble the casserole: Spread the sausage and bean mixture evenly into the greased baking dish. Sprinkle 1 cup of shredded cheese over the top.
- Arrange frozen tater tots in a single layer over the top.
- Place in the oven and bake for 30 minutes.
- Sprinkle the remaining cup of cheese over the tots and bake for another 10 minutes, or until cheese is melted and bubbly.
Serve: Top with sour cream, and green onions, if desired. Enjoy!
