Chili Cheese Tater Tot Casserole

A crispy, cheesy, and bold casserole made with Tallent Chili Cheese Sausage. A recipe the whole family will ask for again and again!

Ingredients:

  • 1 lb Tallent Chili Cheese Sausage, removed from casing
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can pinto beans (do not drain)
  • 1 (10 oz) can Rotel (diced tomatoes with green chilies)
  • 1 (8 oz) can tomato sauce
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • Salt & pepper to taste
  • 2 cups shredded cheddar cheese
  • 1 (32 oz) bag frozen tater tots
  • Sour cream & chopped green onions for garnish

Instructions:

  1. Preheat oven to 375°F. Grease a 9x13-inch baking dish.
  2. In a large skillet over medium heat, cook the Tallent Chili Cheese Sausage, stirring often to break into small crumbles, until browned and fully cooked. Remove from heat and set aside.
  3. In the same skillet, add diced onion and cook until softened, about 3 minutes. Stir in garlic and cook for another 30 seconds.
  4. Add pinto beans, Rotel, tomato sauce, chili powder, cumin, paprika, salt, and pepper. Stir well and let simmer for 5 minutes. Return the browned sausage to the pan and mix well.
  5. Assemble the casserole: Spread the sausage and bean mixture evenly into the greased baking dish. Sprinkle 1 cup of shredded cheese over the top.
  6. Arrange frozen tater tots in a single layer over the top.
  7. Place in the oven and bake for 30 minutes.
  8. Sprinkle the remaining cup of cheese over the tots and bake for another 10 minutes, or until cheese is melted and bubbly.

Serve: Top with sour cream, and green onions, if desired. Enjoy!
