Sweet & Spicy Chipotle Stir-Fry

Ingredients:

  • 1 pound Tallent Sausage Sweet Honey Chipotle Sausages (fresh links, about 4-5 sausages)
  • 1 cup rice (white or brown)
  • 1 tablespoon olive oil or vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (optional, for garnish)
  • 1 tablespoon sesame seeds (optional, for garnish)

Instructions:

1. Cook the Rice:

  • Cook 1 cup of rice according to package instructions. Once done, set it aside.

2. Prepare the Sausage:

  • Heat a large skillet or frying pan over medium heat.
  • Remove the casings from the 1 pound of Tallent Sausage Sweet Honey Chipotle Sausages and crumble the sausage into the pan.
  • Cook the sausage, stirring occasionally, until it’s browned and cooked through (about 7-10 minutes). Use a spatula to break it up into small pieces as it cooks.
  • Once fully cooked, transfer the sausage to a plate and set it aside.

3. Stir-Fry the Vegetables:

  • In the same skillet, add the oil over medium heat.
  • Add the sliced bell peppers and cook for 3-4 minutes, until they’re tender but still vibrant.
  • Add the corn and garlic, and cook for another 2 minutes, stirring occasionally.

4. Add the Sausage Back:

  • Return the cooked sausage to the pan with the vegetables. Stir everything together.

5. Make the Sweet & Spicy Sauce:

  • In a small bowl, mix together the soy sauce, honey, lime juice, and a pinch of salt and pepper.
  • Pour this sauce over the sausage and vegetable mixture in the skillet, stirring to coat everything evenly.

6. Toss with Rice:

  • Add the cooked rice to the skillet and toss everything together until well combined. Cook for another 2-3 minutes to heat through.

7. Garnish and Serve:

  • Taste and adjust seasoning with additional salt, pepper, or lime juice, if desired.
  • Garnish with fresh cilantro and sesame seeds, if using.

Approximate Servings: This recipe makes about 4-6 servings depending on
portion size. It’s perfect for a family meal or for meal prep!
