Sweet & Spicy Chipotle Stir-Fry
Ingredients:
- 1 pound Tallent Sausage Sweet Honey Chipotle Sausages (fresh links, about 4-5 sausages)
- 1 cup rice (white or brown)
- 1 tablespoon olive oil or vegetable oil
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 cup corn kernels (fresh, frozen, or canned)
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- Salt and pepper, to taste
- Fresh cilantro, chopped (optional, for garnish)
- 1 tablespoon sesame seeds (optional, for garnish)
Instructions:
1. Cook the Rice:
- Cook 1 cup of rice according to package instructions. Once done, set it aside.
2. Prepare the Sausage:
- Heat a large skillet or frying pan over medium heat.
- Remove the casings from the 1 pound of Tallent Sausage Sweet Honey Chipotle Sausages and crumble the sausage into the pan.
- Cook the sausage, stirring occasionally, until it’s browned and cooked through (about 7-10 minutes). Use a spatula to break it up into small pieces as it cooks.
- Once fully cooked, transfer the sausage to a plate and set it aside.
3. Stir-Fry the Vegetables:
- In the same skillet, add the oil over medium heat.
- Add the sliced bell peppers and cook for 3-4 minutes, until they’re tender but still vibrant.
- Add the corn and garlic, and cook for another 2 minutes, stirring occasionally.
4. Add the Sausage Back:
- Return the cooked sausage to the pan with the vegetables. Stir everything together.
5. Make the Sweet & Spicy Sauce:
- In a small bowl, mix together the soy sauce, honey, lime juice, and a pinch of salt and pepper.
- Pour this sauce over the sausage and vegetable mixture in the skillet, stirring to coat everything evenly.
6. Toss with Rice:
- Add the cooked rice to the skillet and toss everything together until well combined. Cook for another 2-3 minutes to heat through.
7. Garnish and Serve:
- Taste and adjust seasoning with additional salt, pepper, or lime juice, if desired.
- Garnish with fresh cilantro and sesame seeds, if using.
