Honey BBQ Sausage & Sweet Potato Hash
A sweet and savory skillet meal featuring perfectly cooked
Tallent Honey BBQ Sausage, caramelized sweet potatoes, and onions.
Ingredients:
- 1 lb Tallent Honey BBQ Sausage (fresh links)
- 2 medium sweet potatoes, peeled and diced
- 1 small onion, diced
- 1 red bell pepper, diced (optional)
- 2 tbsp olive oil or butter
- 1 tsp smoked paprika
- ½ tsp garlic powder
- Salt & pepper to taste
- 2 tbsp honey (optional for extra sweetness)
- 2 tbsp BBQ sauce (optional for extra flavor)
- 2 tbsp chopped fresh parsley (for garnish)
- 2 fried or poached eggs (optional, for serving)
Instructions:
1. Cook the Sausage
- Heat a large skillet over medium heat and add ½ cup of water.
- Place the Tallent Honey BBQ Sausage links in the skillet and cover with a lid.
- Let them cook for 8-10 minutes, turning occasionally, until they are firm and mostly cooked through.
- Remove the lid, drain any excess water, and add 1 tbsp of olive oil to the pan.
- Brown the sausages on all sides for another 3-4 minutes until fully cooked (internal temp: 160°F).
- Transfer to a plate, let them rest for a few minutes, then slice into bite-sized rounds.
2. Sauté the Vegetables
- In the same skillet, add another 1 tbsp of olive oil.
- Add the diced sweet potatoes and cook for 6-8 minutes, stirring occasionally.
- Add the onions and bell peppers, and continue to cook for another 5 minutes until tender.
3. Combine & Finish
- Return the sliced sausage to the skillet.
- Stir in the smoked paprika, garlic powder, salt, and pepper.
- Add the honey and BBQ sauce, if using, and stir to coat.
- Cook everything together for 2-3 minutes until flavors meld.
4. Serve & Garnish
- Garnish with fresh parsley and serve hot.
- Top with a fried or poached egg for extra richness.
