Garlic & Green Chile Enchiladas

Ingredients:

  • 1 lb Tallent Roasted Garlic and Green Chile sausage (removed from casing)
  • 10-12 corn tortillas
  • 2 cups shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
  • 1 can (10 oz) red enchilada sauce
  • 1 medium onion, finely chopped
  • 4 oz can diced green chiles
  • 1/2 cup sour cream (optional for serving)
  • Chopped cilantro (optional for garnish)

Instructions:

  1. Prepare the Sausage:
  • Heat a large skillet over medium heat. Add Roasted Garlic and Green Chile sausage to the skillet and cook for 8-10 minutes, breaking it up with a spoon, until browned and cooked through.
  • Once cooked, remove the sausage from the skillet and set it aside.

2. Prepare the Enchilada Filling:

  • In the same skillet, add the diced onion and cook for 3-4 minutes until soft and translucent.
  • Add cooked sausage back into the skillet with the onion. Add diced green chilies and cook together for another 2-3 minutes, mixing well.
  • Remove from heat and stir in 1/2 cup shredded cheddar cheese into the sausage mixture. This will help bind the filling together and add extra flavor.

3. Assemble the Enchiladas:

  • Preheat your oven to 375°F (190°C).
  • Wrap tortillas in a moist paper towel on a microwave safe plate. Warm for 1-2 minutes to soften (this helps prevent cracking).
  • Spread a small amount of enchilada sauce in the bottom of a 9x13-inch baking dish.
  • Take one tortilla and spoon a generous amount of the sausage mixture into the center. Roll up the tortilla tightly and place it seam-side down in the baking dish. Repeat with the remaining
    tortillas.
  • Once all the enchiladas are rolled, pour the remaining enchilada sauce over the top and sprinkle with the remaining 1 1/2 cups shredded cheese.

4. Bake:

  • Cover the dish with aluminum foil and bake for 20 minutes.
  • After 20 minutes, remove the foil and bake for another 5-10 minutes, or until the cheese is melted and bubbly.

5. Serve:

  • Let the enchiladas cool for 5 minutes before serving.
  • Optionally, serve with a dollop of sour cream and a sprinkle of chopped cilantro for added flavor.
